Lemon meringue pie

I had bought some pastry from Wheat Free Bakery ages ago and froze it, I had some spare time so thought I would start to experiment.  




To start with we rolled out the pastry and had to blind bake it.  We realised pretty quickly that we didn't have the balls that you're meant to use - they were in a plant pot in the garden for decoration!!  We had to use some pasta on baking parchment instead - it worked out pretty well!  

We then filled it with shop bought lemon curd - I wouldn't recommend doing this as it just melted in the oven and when we cut it, it spilled out everywhere.  It tasted good though, just very sweet!  You could only have a small slice.



We then mixed up a simple meringue mix and spread it on, if you wanted to be fancy you could pipe it but surprise surprise, I don't own a piping bag!  We then put it in the oven for 30mins at about 160c (it was a warm oven as we had just cooked our dinner in it).  It turned out like this:
